2017 Wild Yeast Syrah

Description

Using wild or indigenous yeast, allows our 2017 Wild Yeast Syrah to show its full, delicious character. From its deep maroon color, to the warm and inviting aromas of dark berries and earthy Dutch licorice, all the way to flavors of boysenberries, dried mission figs, black currant and truffle, this wine is both fruity and savory, lush and fresh.

Tasting Profile

Harvested on August 28th with Brix sugar levels of 24.8. Cold soaked in tank for two days at 48°F and fermented for 7 days with temperatures from 70-88°F. There was no commercial yeast added and it was 100% natural spontaneous fermentation. Wild Yeast expresses Terroir – varietal character, aromas, flavors, mouthfeel, and a sense of place (Temecula). Free Run wine is used for all Reserve wines, no pressed wines are used.

Classic comfort foods such as beef bourguignon or cassoulet pair beautifully with the wine’s rustic charm, and vegetarian options like grilled portobello mushrooms or ratatouille complement its layered complexity. For a finishing touch, enjoy it with aged cheddar, gouda, or pungent blue cheeses to highlight the Syrah’s vibrant fruit and spice.
